Mio and Coral back again, with a vegetarian taco recipe that’s a favorite in our house. Mio’s made it for years, and recently Coral included enjoying a dinner of Mio’s Mix Tacos it in her “Day in my Life” video, which led to some requests for the recipe!
It’s a fairly simple recipe, you can customize it easily to bring in flavors or ingredients you love. We’re already hungry so let’s dive in!
Mio’s Mix Tacos
You’ll want to get your choice of rice and beans started in separate pans first. Most often you’ll find us having refried beans and white rice.
While the beans and rice warm in their pans, combine the following ingredients in a new pan over medium heat with the oil of your choice:
1 Romanesco or cauliflower chopped or “riced”
1 1/2 tbsp diced ginger
1 tbsp diced garlic
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp paprika
Stir the Romanesco mix occasionally as it cooks for 10-12 minutes.
Between stirs, get your salsa ready, chopping and mixing:
1 avocado
1/2 cup chopped pineapple or mango
1/2 cup chopped cherry tomatoes
Warm your corn tortillas and load them up with your beans, rice, seasoned Romanesco, salsa, and top it off with queso fresco! They’re fresh and full of flavor, a favorite at least once a week around here!
